If I don’t have a leftover turkey carcass from Thanksgiving or Christmas, I buy bones from a local butcher and I only use the bones are from a grass fed chicken or cow. My go-to is chicken or turkey, but you can use beef, or fish bones with the same benefits.

This simple recipe can be made with chicken, turkey, beef, or even fish bones. I prefer using pasture-raised poultry bones, but any grass-fed or organic bones will work.
Ingredients:
2 lbs bones from a grass-fed, organic source (e.g., 1 turkey carcass or 2 chickens)
2 chicken feet (optional, for extra collagen)
8 cups filtered water
2 tbsp apple cider vinegar
1 onion, peeled
2 carrots
2 celery stalks
1 bunch parsley (optional)
1 tbsp sea salt (optional)
1 tsp peppercorns (optional)
2 cloves garlic (optional)
Herbs/spices to taste (thyme, rosemary, bay leaf, etc.)
Instructions (Choose Your Method)
Instant Pot (my favorite!)
Add all ingredients to the pot.
Cover and set to Manual for 2–3 hours.
Let pressure release naturally.
Strain into jars and let cool before storing.
Slow Cooker
Add ingredients to your slow cooker and fill with water.
Set to Low and cook for 10–12 hours.
Skim any foam from the surface during the first few hours.
Strain and store.
Stovetop
Add ingredients to a large stock pot.
Bring to a boil, then reduce to a simmer.
Simmer covered for 8–10 hours, skimming foam as needed.
Strain and transfer to mason jars.
